As a Head of Department, you will be responsible for managing a brigade of 12, including recruiting, training and development and retention of the team as well as a team of 6 kitchen porters. The Head Chef is responsible for the creation, development and implementation of all new dishes for the L’oscar restaurant, room service, bar and banqueting facilities as well as the staff restaurant. To ensure the quality and consistency of all products produced and served including the efficiencies, consistency, associate training and accountability of costs associated with the kitchen department. To manage the food costs and financial responsibilities as well as maintaining the 5 star health and safety and food hygiene standards.
